We all know that getting in shape and staying healthy means being active and eating right. We love trying new recipes in our house – and healthy versions that are also delicious are not always easy to come by! I made this just the other day – it was easy to make, we had all the ingredients on hand and it is doesn’t have anything in it to be ashamed of! We get most of our recipes from All Recipes – we use the website and the free app. It’s super easy to search based on ingredients you like, cooking style, or type of meal – and the reviews are very useful.
Ingredients: 3 skinless boneless chicken breasts, Salt and ground black pepper to taste, 1 teaspoon garlic salt, 2 tablespoons olive oil, 1/2 thinly sliced onion, 1/2 cup balsamic vinegar, 1 (14.5 ounce) can diced tomatoes, 1 teaspoon each dried basil, oregano, rosemary, and thyme.
Directions: Season chicken breasts with salt, ground black pepper and garlic salt. Heat olive oil in a medium skillet, and brown the onion and seasoned chicken breasts – only takes a few minutes each side. Pour tomatoes and balsamic vinegar over chicken, and season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes.
We made this with mashed potatoes and green beans – two quick and healthy sides that go perfectly with this chicken. Enjoy!
