Healthy Blueberry Muffin Recipe
We’ve sort of been slacking on posting recipes lately, but it’s not because I haven’t been cooking or thinking about it! I’ve been searching and testing healthy blueberry muffin recipes ever since my son was old enough to eat muffins – he loves them, and I love them. The problem is they are typically full of sugar and oil, but I have finally come up with a recipe we love that is a little healthier than the average blueberry muffin.
Here’s the magic:
1/2 Cup Sugar
2/3 Cup Sugar Free Applesauce
2/3 Cup Reduced Sugar Almond Milk
3 Medium Ripe Bananas, smashed or pureed
3 Cups Flour (I use half white flour, half wheat flour)
4 Teaspoons Baking Powder
3 Cups Frozen or Fresh Blueberries
Preheat oven to 400* and lightly grease 24 muffin tins
In a medium bowl, mix together sugar, applesauce and bananas; add milk and eggs until combined. In another large bowl, mix together flour and baking powder. Add wet mixture to dry ingredients until combined. Lightly flour blueberries so they stay suspended during baking and gently fold into the muffin mixture. The more blueberries, the better – but the exact measurement of berries is flexible depending on your taste.
Bake for 20 minutes, remove and let cool. That’s it!
