Delicious Tilapia Recipe

I love sharing recipes that I try out on my family – this one was an attempt to change up our weekly salmon dish with a tilapia recipe that we’d love.  This is a winner!  As usual, my inspiration for this delicious tilapia recipe came from a base recipe at AllRecipes.com.  Of course, I made my own changes and here’s the final recipe that the entire family (including our 3 year old) gobbled up! Just add some roasted broccoli or your favorite vegetable on the side!

 

1 pint fresh mushrooms, sliced

1 tbsp olive oil plus 1/2 tbsp butter

1/4 tsp garlic salt and pepper

1 lb. tilapia (or cod)

1 garlic clove, minced

2 tbsp capers (optional)

1/2 cup of white wine or chicken stock *see note below for my tip*

 

Start with olive oil and butter in a medium saute pan on medium heat, add mushrooms and cook until they turn soft, add garlic salt and pepper and cook until desired doneness.  Remove the mushrooms and set aside.

Add additional oil or butter if pan is dry and add in minced garlic on medium-low heat so as not to burn the garlic.  Salt and pepper tilapia on both sides.  After garlic is soft (about 2 minutes), add tilapia to pan and cook on one side for 2 minutes.  Flip tilapia and cook for another minute, add wine or chicken stock (*see note below), capers and mushrooms back into the pan.  Cover and cook for 2 minutes or until fish is flakey and cooked through.

*I serve orzo with this fish for a perfect compliment, it also serves as double duty for the sauce.  Bring 2 cups chicken stock to a boil, add 1/2 cup to 1 cup of orzo to boiling liquid and cook until tender.  Strain the orzo over a bowl and use that liquid in place of additional stock or wine.  This liquid is thick with great flavor –  perfect for tying the dish together, please you get double duty out of it!  Throw a 1/2 tsp of oil on the orzo to keep it from sticking.
