Asian Broccoli & Couscous

This is a dish that a friend brought over to help keep us fed when Cohen first arrived, and its become one of my favorite go-to healthy dinner recipes.  It’s super easy, relatively healthy and a quick meal to make any weeknight! As you know, I’m not so good when it comes to actually measuring ingredients – you really can’t mess this one up!

1 Box Garlic & Herb Couscous

1 Head of Broccoli or 1 Bag Pre-Cut Broccoli Florets

1 lb. Ground Turkey (or beef if you prefer)

1/4 cup Stir-Fry Sauce (found in Asian aisle)

1 package Stir-Fry Seasoning (found in Asian aisle)

Brown ground turkey and add stir-fry seasoning as directed on package.  While the meat is browning, prepare couscous as directed on box and steam or boil broccoli florets until tender.  Mix together the browned turkey, broccoli and couscous into larger pot/pan or casserole dish and stir in the stir-fry sauce.  That’s it, you’re done!

I’ve prepared this meal earlier in the day or the day before in a casserole dish and just reheated in the oven or in the microwave.  The leftovers are great for a light lunch as well.  I’ve even tested it on kids – and they actually liked it!  Play with the ingredients to your liking…couldn’t be an easier healthy dinner recipe!
