Easy Recipe for Mussels
You know I love to cook, and I want to share great recipes that you can use for your own events or for your family. This is a healthy recipe to have at home – great for helping you stay on track if you’re trying to get or stay in shape! It’s very quick to make, low in calories and delicious!
This is one you don’t have to worry about exact measurements – it always comes out good!
You need: Mussels, fav white wine, 1 can Italian stewed tomatoes, chicken broth or bouillon with water, chopped garlic clove, salt & pepper and butter.
Directions: In a large pot, start with garlic and olive oil or butter (I like to use both) until garlic softens, add about a cup of wine white and let it cook out for a about a minute. Add in the can of stewed tomatoes, and about 1 cup of chicken broth. Let heat up until it is simmering, add salt & pepper and 2-4 tbsp of butter to taste. Toss in the mussels and cover for just a few minutes until the mussels open.
That’s it! Couldn’t be easier. Serve with some toasty bread for dipping – believe me, you’ll want to sop up that sauce! Include a light salad so you get some good veggies as well and you’ll have a dinner that looks impossible but wasn’t!
